Daing na Bangus Recipe (Pan-Fried Marinated Milkfish)
Daing na Bangus is a classic Filipino favorite featuring butterfly-cut milkfish (bangus) marinated in cane vinegar, heavy crushed garlic, black peppercorns, and salt, then pan-fried until golden, crispy, and savory. Served alongside garlic fried rice (sinangag) and a fried egg, this iconic dish forms the heart of the beloved Pinoy breakfast favorite, BangSilog.
What is Daing na Bangus?
Daing refers to a traditional Filipino method of preserving fish by butterflying, salting, and marinating in vinegar or sun-drying. In Daing na Bangus, the milkfish is split open along its back, cleaned, and steeped in a garlic-vinegar marinade (marinated daing) before being pan-fried. The acid in the vinegar tenderizes the fish while infusing the rich, fatty belly with a sharp garlic-tangy flavor that crisps up beautifully in hot oil.Ingredients

Step-by-Step Instructions:
- Wash the butterflied milkfish thoroughly under cold water, paying special attention to removing any dark bloodline along the spine. Pat dry completely with paper towels.

- In a wide, shallow glass dish or non-reactive tray, combine the cane vinegar, crushed garlic, rock salt, and crushed black peppercorns. Stir until the salt dissolves.

- Place the butterflied milkfish flesh-side down into the marinade, ensuring the meat and belly are submerged.

- Cover the dish with plastic wrap and refrigerate for at least 4 hours (or overnight for maximum garlic-vinegar flavor penetration).

- Remove the milkfish from the marinade and drain thoroughly. Shake off excess garlic pieces so they do not burn while frying, and pat the skin side dry with paper towels.

- Heat the cooking oil in a large skillet or wide frying pan over medium-high heat.

- Carefully lay the milkfish skin-side down into the hot oil. Fry for 5 to 6 minutes until the skin turns deep golden brown and crispy.

- Gently flip the milkfish using two spatulas and fry the flesh side for another 4 to 5 minutes until golden brown and cooked through.

- Lift the fish with a slotted spatula and drain excess oil on paper towels. Transfer to a platter and serve piping hot with garlic fried rice (sinangag), fried eggs, and a side of spiced vinegar or toyomansi!
